Pumpkin Walnut Cake. Ingredients:
3 c. sifted flour |
2 tsps. baking powder |
2 tsps. baking soda |
1 tsp. salt |
3 1/ tsps. cinnamon |
4 large eggs |
2 c. sugar |
1 1/2 c. corn oil |
1 can (lb.) pumpkin |
1 c. walnuts |
Directions:
1. On wax paper sift together flour, baking powder, salt and cinnamon. 2. With mixer at high speed, beat eggs till yolks and whites are combined. 3. Gradually add sugar, beating till thick and lemon colored. 4. Beating constantly pour in corn oil. 5. With mixer at low blend in dry ingredients alternately with pumpkin. 6. Beat until smooth after each addition. 7. Stir in walnuts. 8. Turn into ungreased tube pan, 10 x 4 inches. 9. Bake at 350 degrees about 1 hout and 10 minutes. |
