Very tastey pumpkin bread perfect for a dessert or a snack during the fall and thanksgiving.
Ingredients:
1 2/3 cup whole wheat flour
1 cup splenda
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1 cup pumpkin
2 eggs
1/3 cup water
1/4 cup applesauce
1/2 cup walnuts
Directions:
1. In a bowl combine 1 cup whole wheat flour, splenda, baking soda, cinnamon, baking powder, and salt.
2. In a separate bowl combine the pumpkin, eggs, water, and applesauce.
3. Stir pumpkin mix into the dry ingredients. Add the walnuts.
4. Pour into a large loaf pan that is sprayed. Bake at 350 for 60-65 minutes. Cool for at least 15 minutes before taking the loaf out of the pan.
5. Cut into 16 slices.
