Yummy. Anything with pumpkin is awesome to me. This recipe came from an estate sale in Rockwall, Texas in 1988. I have made these numerous times since then. Hope you enjoy as much as we do. Yummy. Ingredients:
1-1/2 cups sifted flour |
2 tablespoons sugar |
3 teaspoons baking powder |
1/2 teaspoon ground cinnamon |
1/4 teaspoon salt |
1/8 teaspoon ground nutmeg |
1-3/4 cup milk |
1 cup canned or pureed cooked pumpkin |
1/3 cup vegetable oil |
2 egg yolks |
2 egg whites stiffly beaten |
Directions:
1. On sheet of waxed paper sift together flour, sugar, baking powder, cinnamon, ginger, salt and nutmeg then set aside. In medium bowl mix milk, pumpkin, oil and egg yolks until well blended. Add dry ingredients then stir just until well blended then gently fold in stiffly beaten egg whites. Bake in waffle iron according to manufacturer's directions. Serve hot with maple syrup. |
