Pumpkin & Sweet Potato Soup |

Everyone has their own version of pumpkin soup - it's such a popular and easy recipe to make. This one is mine - hope you enjoy! By the way, I add chilli flakes to mine as I like it a bit spicy. Ingredients:
1 butternut pumpkin |
1 medium sweet potato |
1 large onion, chopped |
3 teaspoons crushed garlic |
6 -8 cups vegetable stock |
1 1/2 teaspoons basil |
1 1/2 teaspoons rosemary |
1 1/2 teaspoons oregano |
1 -1 1/2 teaspoon crushed red pepper flakes |
crushed black pepper |
cream (optional) |
Directions:
1. Peel and dice into large cubes the pumpkin. 2. Peel and dice into large cubes the sweet potato. 3. To a large pan add all ingredients and cook for up to an hour and remove from heat. 4. Cool and blend soup. 5. Reheat. 6. Serve hot with a dollop of cream (optional) and crusty warmed bread. |
