1/2 cup flour |
1/4 cup brown sugar |
1 1/2 teaspoons cinnamon |
3 tablespoons butter |
1/2 cup coarsely chopped nuts |
2 cups flour |
2 teaspoons baking powder |
1 1/2 teaspoons cinnamon |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 cup butter, softened |
2 eggs |
1 cup pumpkin puree |
1 teaspoon vanilla extract |
Directions:
1. For streusel topping, combine flour brown sugar and cinnamon in a medium bowl. Cut in butter until crumbly; stir in nuts. 2. For the coffee cake, combine dry ingredients in a small bowl. 3. Beat together butter and sugar in a large mixing bowl. Add eggs one at a time. 4. Beat in vanilla and pumpkin. Gradually beat in flour mixture. 5. Spoon half the batter into a greased and floured 9-inch round cake pan. Sprinkle 3/4 cup of the streusel topping over batter. 6. Spoon remaining batter over and top with remaining topping. 7. Bake in preheated 350 oven for 45-50 minutes or until done. 8. Cool on wire rack before serving. |
