A really nice thick soup. Ingredients:
2 (29 ounce) cans tomatoes |
2 cups water |
2 onions, sliced |
4 cups uncooked pumpkin or 4 cups squash |
1/2 teaspoon garam masala |
1 teaspoon cumin |
1 teaspoon coriander |
1/4 teaspoon turmeric |
1 inch fresh ginger, chopped |
1/4 cup oil |
1 1/4 ounces peas |
Directions:
1. In large pot,heat oil to med temp,Saute' 2. ginger,onions. 3. Addm all spices. 4. Cook over low heat 2 to 3 hours. 5. Pur'ee if desired. |
