Delicious homemade pumpkin muffins perfect for Thanksgiving morning breakfast or late afternoon snack. Low fat yet packed with 4 grams of fiber each muffin. Ingredients:
1 1/2 cups all purpose unbleached wheat flour |
1 1/2 cups whole wheat flour |
2 eggs |
4 oz raisins |
1/3 cup apple juice |
2 oz butter |
15 oz canned pumpkin |
1/2 cup brown sugar |
1/4 cup honey |
1/2 cup walnut pieces, chopped |
1 tsp pumpkin pie spice |
1/2 tsp salt |
2 tsp baking soda |
1 tsp baking powder |
Directions:
1. Add dried fruit to apple juice in container and microwave for 2 minutes to plump up fruit. 2. Preheat oven to 350 F. 3. Cream together fat, sugars, spices, and eggs. 4. Combine all ingredients together. 5. Mound high into greased muffin tins. 6. Bake for thirty minutes or until toothpick comes out clean. 7. Remove from muffin pan onto a wire rack and allow to cool, if you can! 8. Freezes well or keep in air tight covered container in fridge for up to three days. |
