2 1/3 cups pancake mix |
2 tablespoons sugar |
1 teaspoon pumpkin pie spice |
2 eggs |
1/2 cup canned pumpkin |
2 tablespoons canola oil |
8 ounces whipped topping, thawed (1/2 tub) |
1 tablespoon sugar |
1/2 teaspoon vanilla |
1/2 teaspoon ground nutmeg |
Directions:
1. Heat griddle and prepare with cooking spray. 2. In a bowl, combine pancake mix, sugar and pumpkin pie spice. 3. In a separate bowl, beat together eggs, water, pumpkin and oil until smooth. 4. Whisk together the pancake mixture and the pumpkin mixture until moistened. 5. Pour 1/4 cup batter per pancake onto hot griddle. Cook 1-2 minutes per side until golden brown. 6. In a bowl, combine whipped topping, sugar, vanilla and nutmeg. Do not over mix. 7. Serve hot pancakes with the whipped topping. |
