These are a tasty alternative to regular pancakes. Ingredients:
2 1/3 cups buttermilk baking mix |
2 tablespoons sugar |
1/2 teaspoon cinnamon |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground ginger |
2 eggs |
1 1/4 cups milk |
1/3 cup canned pumpkin |
1/4 cup vegetable oil |
Directions:
1. Beat all ingredients with a wire whisk or hand mixer until smooth. 2. Pour by scant 1/4 cup onto lightly greased hot griddle. 3. Cook until edges are dry. 4. Turn and cook until golden. 5. Serve with maple syrup or spiced apples. |
