Ingredients:
1 cup(s) flour |
1/2 cup(s) sugar |
2 teaspoon(s) baking powder |
1.5 teaspoon(s) cinnamon |
1/2 teaspoon(s) salt |
1/4 teaspoon(s) pumpkin pie spice |
4 tablespoon(s) cold butter, cut into pieces |
1 cup(s) pumpkin puree (heaping) |
1/2 cup(s) evap milk |
1 egg |
1.5 teaspoon(s) vanilla extract |
2 tablespoon(s) sugar |
1 teaspoon(s) cinnamon |
1/4 teaspoon(s) nutmeg |
1/4 cup(s) butter, softened |
4 ounce(s) cream cheese |
1/2 pound(s) powdered sugar |
1/2 teaspoon(s) vanilla extract |
Directions:
1. preheat oven to 400 - grease 12 muffin tins 2. sift flour, baking powder, cinnamon, pumpkin pie spice and salt - cut in butter 3. in separate bowl, mix pumpkin, evap milk, egg and vanilla - pour pumpkin mixture into flour mixture - fold gently to combine 4. pour into greased muffin pan - sprinkle with topping mixture 5. bake for 25 minutes - allow to cool in pan for 15 minutes - then remove and top with frosting 6. for frosting: mix all ingredients oh high until soft and whipped - spread onto cooled muffins - store in fridge (icing will soften) |
