Lowfat, vegan and yummy! Ingredients:
2 1/2 cups whole wheat flour |
1/2 cup sugar |
3/4 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon allspice |
2 teaspoons cinnamon |
1 teaspoon ground ginger |
1 (14 ounce) can pumpkin puree |
2/3 cup applesauce |
1 1/2 teaspoons lemon juice |
1 1/2 teaspoons vanilla extract |
1/2 cup dates |
Directions:
1. Preheat oven to 375. 2. Line muffin tins with papers. 3. Mix dry ingredients. 4. Add wet ingredients to dry and mix well, add a little water if too thick. 5. Fold in dates. 6. Bake for 25 minutes or until done. |
