Great fall/winter cookies Ingredients:
2 1/4 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
3/4 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/4 teaspoon ginger |
3/4 cup shortening |
1/2 cup packed brown sugar |
1/2 cup white sugar |
1 egg |
1/2 teaspoon orange zest |
8 ounces pumpkin pie filling (about 1/2 can) |
Directions:
1. Mix flour, baking soda, baking powder, cinnamon, nutmeg ans ginger in one bowl. 2. Beat shortening and sugars together in a second bowl. Add the egg, vanilla and orange zest and beat until smooth. Stir in the flour mixture a little at a time. After adding about half, add the pumpkin filling and then stir in the rest of the flour mix. 3. Cover dough with plastic wrap and place in fridge for 3-4 hours to harden. 4. Drop about 1 tablespoon of dough onto cookie sheet, keep at least one inch apart. Bake at 375F for 10-12 minutes (until brown and fork comes out clean when inserted into the middle) Transfer to cooling rack immediately. |
