Low-fat version of pumpkin spice bread Ingredients:
1 cup brown sugar |
1 cup white sugar |
1/4 cup vegetable oil |
3/4 cup unsweetened applesauce |
4 eggs |
1 (16 ounce) solid-pack pumpkin |
1 teaspoon vanilla extract |
1 cup oat bran flour |
2 1/2 cups whole wheat flour |
2 teaspoons baking soda |
1 teaspoon baking powder |
1 teaspoon salt |
2 teaspoons cinnamon |
1 teaspoon nutmeg |
1 teaspoon allspice |
Directions:
1. 1. Combine sugar, oil, applesauce, and eggs. 2. 2. Add pumpkin and vanilla extract. Mix well. 3. 3. Combine dry ingredients in a separate bowl. Add to the pumpkin mixture alternately with water. 4. 4. Pour into 2 greased 9x5x3 loaf pans or 2 muffin sheets. 5. 5. Bake 350F for 60-70 min.(loaf pans) or 25 minute (muffin pans) until bread tests done. Cool in pans for 10 minute Remove and cool on wire rack. |
