This is an exceptional fall dessert, should be tried for Thanksgiving - Ingredients:
4 eggs |
2 cups sugar |
1 (15 ounce) can solid-pack pumpkin |
1 cup vegetable oil |
2 cups flour |
2 teaspoons baking powder |
2 teaspoons cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ginger |
1/4 teaspoon clove |
1/2 cup dried cranberries |
1 (16 ounce) can cream cheese frosting |
Directions:
1. In a mixing bowl, beat eggs, sugar, pumpkin and oil until blended. 2. Combine flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves; add to pumpkin mixture just until combined. Stir in cranberries. 3. Pour into a 15x10x1-inch baking pan. Bake at 350F for 25-30 minutes or until a toothpick inserted near the center comes out clean. 4. Cool completely on a wire rack. 5. Frost with cream cheese frosting. |
