From Country Woman magazine. Ingredients:
4 eggs |
2 cups sugar |
1 cup vegetable oil |
1 (15 ounce) can pumpkin |
2 cups flour |
2 teaspoons baking powder |
2 teaspoons ground cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ground ginger |
1/4 teaspoon ground cloves |
1/2 cup dried cranberries |
1 (16 ounce) can cream cheese frosting (or 2 cups homemade) |
Directions:
1. Heat oven to 350. 2. Beat eggs, sugar, oil and pumpkin in large bowl. 3. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves, just until combined. 4. Stir in cranberries. 5. Spread in greased 15 x 10 x 1 inch pan. 6. Bake 25 to 30 minutes or until a toothpick inserted near the center comes out clean; cool completely. 7. Frost with Cream Cheese Frosting. |
