Soup is my favorite dish during the cooler months. This Pumpkin Soup makes a delicious starter for your Thanksgiving meal. Ingredients:
1/4 cup butter |
1/2 cup onion, chopped |
1/4 teaspoon ground ginger |
1/4 teaspoon ground nutmeg |
1/8 teaspoon ground cinnamon |
3 cups chicken broth |
2 cups pumpkin puree, canned |
1 cup half-and-half |
2 tablespoons brandy |
salt, to taste |
pepper, to taste |
Directions:
1. Saute onion in butter until transparent. Blend in spices and broth. Bring to a boil. 2. Stir in pumpkin puree and half-and-half. Reduce heat and cook until soup is heated through but NOT boiling, stirring occasionally. 3. Blend in brandy. 4. Salt and pepper to taste. Serve hot. |
