Created as one of the dishes for our ECW (Episcopal Church Women) to raise funds. Smooth and lovely. When it cools it will seem too thick, it is not. Ingredients:
30 ounces pumpkin (if pumpkin powder 1 part to 2.5 parts water by weight) |
24 ounces chicken broth |
3 tablespoons butter |
1 1/2 cups cream |
1/2 teaspoon coriander |
1 1/2 teaspoons cumin |
1 1/2 teaspoons curry |
1 1/2 teaspoons garlic |
1 1/2 teaspoons pepper |
1/2 teaspoon red pepper flakes |
3/4 teaspoon salt, kosher |
1 teaspoon turmeric |
Directions:
1. Melt the butter in the broth. Add remaining ingredients. Mix to smooth. Bring to boil and then simmer for 10-15 minutes. 2. Use a whisk or stick blender to insure a very smooth consistency. |
