Super Foods Cookbook Ingredients:
1 large onion, minced |
2 cups chicken stock |
1 1/2 cups pumpkin puree |
1/2 teaspoon dried oregano |
1/4 teaspoon hot pepper sauce |
1/4 cup toasted pumpkin seeds |
Directions:
1. In a saucepan, cook the onions in 2 tablespoons of the chicken stock until limp. 2. Add the remaining stock, pumpkin, oregano and hot pepper sauce. 3. Simmer for 15 minutes. 4. Serve sprinkled with pumpkin seeds. |
