I grow my own pumpkins and always make a batch of this soup. Its the only soup my husband likes. I hope you enjoy. Ingredients:
1/2 large pumpkin, chopped |
1 sweet potato, chopped |
2 carrots, chopped |
2 medium onions, diced |
2 garlic cloves, diced |
chicken stock (just to cover the veggies) |
1 slice bacon |
butter |
salt |
fresh cracked pepper |
cream (use however much you think you need, i usually use about 200ml) |
Directions:
1. Melt butter in a large pot and fry off onions and garlic until just soft. 2. Add pumkin, carrots and sweet potato and let veggies sweat for about 15 minutes Stir a few times. 3. Add the bacon and continue to fry lightly until bacon is cooked, then add stock. 4. Bring to boil then simmer until carrots are soft. 5. Add the cream, salt and pepper then blend with a stick blender until smooth. 6. Eat with lots of crusty bread. |
