Pumpkin Roll With Cream Cheese Filling |

Good anytime, but nice at Thanksgiving. Ingredients:
3 eggs |
1 cup sugar |
2/3 cup pumpkin |
3/4 cup flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon ginger |
2 teaspoons cinnamon |
1/2 teaspoon nutmeg |
1 cup finely chopped nuts |
filling recipe |
1 8oz cream cheese |
1/4 cup butter |
1/2 teaspoon vanilla |
1 cup powdered sugar |
mix well |
Directions:
1. Beat the eggs on high speed of mixer for 5 minutes. 2. Slowly beat in the sugar. 3. Stir in the pumpkin. 4. Stir together the dry ingredients and fold into the pumpkin mixture. Grease and flour a wax paper lined jelly roll pan and spread the mixture in the pan, sprinkle with the nuts. 5. Bake at 350* for 15 - 20 minutes. 6. Turn out on kitchen towel that has been sprinkled with powdered sugar, place a piece of wax paper over the cake and roll up from the short side. Let cool then unwrap and spread with Cream Cheese Filling and roll back up Refrigerate |
