Great for Holidays, Freezes well One of my families all time favorites Makes wonderful gifts. Ingredients:
3 eggs |
3/4 cup flour |
1 cup sugar |
2/3 cup pumpkin |
1/2 teaspoon cinnamon |
1 teaspoon baking soda |
8 ounces cream cheese |
2 tablespoons butter |
1 teaspoon vanilla |
1 cup powdered sugar |
2 tablespoons pecans |
Directions:
1. Prepararation: Mix the cream cheese, butter and vanilla well and set aside. Line 10X15 cookie sheet with wax paper sprayed with cooking spray. 2. Beat together eggs, flour,sugar, pumpkin, cinnamon, baking soda. 3. Pour into edged cookie sheet lined with sprayed wax paper. 4. Bake at 375 degrees for 10 minutes. Let cool. 5. Coat linen towel with powdered sugar. 6. Tip cooled cake onto towel. 7. Spread filling onto cake and roll cake. 8. You can set aside a small amount of frosting to coat the roll and sprinkle with crushed pecans of so desired. 9. Refrigerate or freeze. |
