This is my favorite for the holidays! It's like pumpkin pie with rice! I got this recipe from a local newspaper. Ingredients:
2 cups pumpkin, cooked |
1 1/2 cups evaporated milk |
3/4 cup sugar |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/4 teaspoon clove |
2 eggs, slightly beaten |
1 1/2 cups rice, cooked |
1/2 cup raisins |
Directions:
1. Combine pumpkin, sugar, salt and spices; stir in eggs. 2. Add milk and mix well. 3. Combine rice and raisins to the mixture and stir together. Pour the mixture into a 1 1/2 quart casserole dish and place in a pan of water. 4. Bake at 350 degrees for 50 to 60 minutes, or until set in the middle. 5. Cool completely and top with whipped topping. |
