Quick, easy, and moist muffin for snack or breakfast.
Ingredients:
2 cups raisin bran cereal
1 cup evaporated milk
1 (15 ounce) can pumpkin
1/3 cup agave nectar (i prefer the amber)
1 cup ground oatmeal (consistency of flour)
1/3 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup vegetable oil
1 egg
Directions:
1. Combine all ingredients in order as listed. Fill muffin cups 3/4 full in either paper liners or lightly greased tins. bake 375 degrees for approximately 20 minutes. Makes approximately 12 muffins.
