Quick, easy, and moist muffin for snack or breakfast. Ingredients:
2 cups raisin bran cereal |
1 cup evaporated milk |
1 (15 ounce) can pumpkin |
1/3 cup agave nectar (i prefer the amber) |
1 cup ground oatmeal (consistency of flour) |
1/3 cup all-purpose flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 cup vegetable oil |
1 egg |
Directions:
1. Combine all ingredients in order as listed. Fill muffin cups 3/4 full in either paper liners or lightly greased tins. bake 375 degrees for approximately 20 minutes. Makes approximately 12 muffins. |
