These are great gluten free muffins that actually hold together and have a great flavour. My kids love them and so do I! Ingredients:
2 cups brown rice flour |
1 cup tapioca flour |
1/2 cup sorghum flour |
1/2 cup coconut flour |
1 teaspoon xanthan gum |
1 teaspoon allspice |
2 teaspoons cinnamon |
1 1/2 tablespoons baking powder |
1 teaspoon salt |
1 1/2 raisins |
1 egg |
1/4 cup egg white |
1 cup brown sugar |
1 cup orange juice |
1 cup soymilk |
1/4 cup vegetable oil |
1/4 cup coconut oil |
1 1/2 cups pumpkin puree |
Directions:
1. Mix dry ingredients together in a large bowl. Mix wet ingredients in a separate smaller bowl. Stir wet into dry and mix until they just combined. Bake at 350C for 20 minutes or until done. |
