WONDERFUL soft & puffy pumpkin cookies topped with a sweet & rich glaze. Ingredients:
2 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon salt |
1/2 cup softened butter |
1 1/2 cups sugar |
1 cup canned pumpkin |
1 egg |
1 teaspoon vanilla |
2 cups powdered sugar |
3 tablespoons milk |
1 tablespoon melted butter |
1 teaspoon vanilla |
Directions:
1. Combine flour, soda, powder, cinnamon, nutmeg & salt. 2. In a separate bowl cream butter & sugar - add pumpkin, egg, & vanilla. Beat until light & creamy. 3. Mix in dry ingredients until well blended. 4. Drop by tablespoon onto greased cookie sheet. 5. Bake 350 for 15-20 minutes or just until edges are beginning to brown. COOKIES WILL STILL BE VERY SOFT when removed from oven. 6. Allow to cool on rack. 7. Drizzle glaze over top of cookies. |
