Pumpkin Pudding-basically pumpkin pie without the crust
Ingredients:
1/2 cup of granulated sugar
1 tsp of cinnamon
1/2 tsp of salt
1/4 tsp of cloves
1/2 tsp of nutmeg
15 ounce of pumpkin
12 ounce of fat-free evaporated milk
2 large eggs
Directions:
1. Mix the dry ingredients together in a bowl; beat eggs and slowly add pumpkin and milk together. Slowly add the dry ingredients to the pumpkin mixture.
2. Spray baking pan with Pam Spray; Bake in oven at 350 for about 40 minutes
3. Serve hot or cold
