These muffins are so moist, they literally melt in your mouth. Ingredients:
1 cup all-purpose flour |
1 cup sugar |
1/3 cup spiru tein protein powder |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 (15 ounce) can pumpkin |
2 eggs |
1/2 cup vegetable oil |
1/4 cup water |
1 teaspoon vanilla |
Directions:
1. Preheat the oven to 350 degrees. 2. Line a muffin tin with muffin papers. 3. In a large bowl mix together the dry ingredients: flour, sugar, protein powder, baking powder, baking soda, salt, and cinnamon. 4. Add the pumpkin, eggs, oil, and water. Mix until just combined. 5. Fill muffin cups 3/4 full. Bake for 25-30 minutes, until center springs back. |
