PUMPKIN POUND CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie Texas in 1992. Ingredients:
1 cup butter |
2-3/4 cup granulated sugar |
2 cups pumpkin |
3 eggs |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1/2 teaspoon salt |
3-1/2 cups flour |
1 teaspoon cloves |
1-1/2 teaspoons baking soda |
2 tablespoons hot water |
1 teaspoon vanilla |
1 cup chopped pecans |
Directions:
1. Cream butter and sugar then add pumpkin, eggs and vanilla. 2. Sift dry ingredients except baking soda together then add to creamy mixture. 3. Combine baking soda with hot water until well combined then stir in dry ingredients. 4. Pour into large loaf ban and bake at 350 for 1 hour and 15 minutes. |
