Very light, not overly spiced, and so easy. The Richards Bed and Breakfast Ingredients:
2 cups all-purpose flour |
4 teaspoons baking powder |
1 teaspoon ground cinnamon |
1/8 teaspoon ground nutmeg |
1/8 teaspoon ground allspice |
3/4 cup sugar |
1 1/2 cups cooked pumpkin, mashed |
3 eggs |
1 cup milk |
3/4 cup vegetable oil |
1 teaspoon vanilla extract |
1/2 cup pecans, chopped, optional |
Directions:
1. In a medium-sized bowl, sift together the flour, baking powder, cinnamon, nutmeg, allspice, and sugar. 2. In a large bowl, beat together the pumpkin, eggs, milk, oil, and vanilla. 3. Add the dry ingredients and blend thoroughly. 4. Pour 1/4 cup batter on a hot greased griddle. 5. Cook until the bottom is lightly browned and bubbles form. 6. Turn and finish cooking on other side. 7. Serve with hot syrup. |
