Incredibly moist pumpkin muffins that are perfect for a fall brunch. Ingredients:
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 cup canned solid-pack pumpkin |
1/3 cup vegetable oil |
2 large eggs |
1 teaspoon pumpkin pie spice |
1 1/4 cups sugar |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
Directions:
1. Preheat oven to 350 degrees. 2. Combine wet ingredients thoroughly with wisk. 3. Whisk in spices and flour gradually. 4. Pour into greased or lines muffin tins, filling 3/4 full. 5. Bake for 25-30 minutes. |
