Pumpkin Pie flavored Granola Bars Ingredients:
3 1/4 cups rolled oats |
1 teaspoon pumpkin pie spice |
1/2 teaspoon ground cinnamon |
1/2 teaspoon salt |
3/4 cup light brown sugar |
1/2 cup pumpkin puree (canned pumpkin) |
1/4 cup applesauce |
1/4 cup honey |
1 teaspoon vanilla extract |
1/2 cup dried cranberries |
1/2 cup pecans, chopped |
Directions:
1. Preheat oven to 350 degrees F. 2. Whisk together the oats, pumpkin pie spice, cinnamon and salt in a large mixing bowl. 3. In a separate bowl, whisk together the honey, brown sugar, pumpkin, applesauce and vanilla extract until smooth. 4. Pour the wet mixture over the oats and mix with a wooden spoon. 5. Stir in the cranberries and pecans. 6. Pour and evenly press the mixture into a coated 8 x 8 pan. 7. Bake for 35 to 40 minutes or until golden brown. 8. Allow to cool, then cut into bars and serve. Store at room temperature in an airtight container. |
