Enjoy the great taste of pumpkin withouth the crust.
Ingredients:
1 package yellow cake mix
1 egg
8 tablespoons butter or margarine
8 ounces cream cheese
1 can pumpkin - 15 oz.
3 eggs
1 teaspoon vanilla
8 tablespoons butter or margarine
3 1/2 cups powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
whipped topping - if desired
Directions:
1. In a large bowl combine the cake mix, egg, and butter. Mix well with an electric mixer.
2. Pat into a 9 x 13 pan that is lightly greased.
3. In another bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter. Beat together.
4. Add powdered sugar, cinnamon, and nutmeg. Mix well.
5. Spread pumpkin mixture over the cake batter. Bake for 40 to 45 minutes. Make sure you do not over bake. Center should be a little gooey.
6. Serve with whipped topping if desired
