Here is a lovely cake that is just great for those Harvest celebrations, or for anytime of year for that matter!! Ingredients:
1 (18 ounce) box yellow cake mix, save 1 cup for topping (2-layer) |
1/2 cup butter or 1/2 cup margarine, softened |
1 egg |
1 (16 ounce) can pumpkin |
3 eggs |
2/3 cup evaporated milk |
2 teaspoons cinnamon |
1 cup sugar |
1 cup reserved cake mix |
1/2 cup sugar |
1/4 cup butter or 1/4 cup margarine, softened |
1 cup pecans |
Directions:
1. Mix together cake mix (except 1 cup), 1/2 cup butter or margarine, softened, and 1 egg and press into 9x13-inch pan. 2. Mix filling: 1 can (16oz) pumpkin, 3 eggs, 2/3 cup evaporated milk, 2 teaspoons cinnamon, 1 cup sugar. Mix filling and pour over crust. 3. TOPPING:. 4. Mix 1 cup reserved cake mix, 1/2 cup sugar, 1/4 cup butter. Mixture will be crumbly. Sprinkle over filling. Put on pecans. 5. Bake at 350F for 1 hour and 15 minutes. |
