So so yummy. Ingredients:
1 small pumpkin |
9 ounces ready-made pie pastry |
1 1/4 cups heavy cream |
3 eggs |
1/4 cup sugar |
1/2 teaspoon salt |
1 teaspoon ground ginger |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
Directions:
1. Set the oven to 400°F for the pastry. Roll the pastry into a circle and line a nine-inch pie pan. Bake for about 15 minutes, or until golden brown. 2. Scoop the flesh out of th pumpkin and throw away the seeds and skin. Put in a pan, cover with water, and simmer for 25 minutes. 3. Drain away the water and leave the pumpkin to cool down. Mash with a fork or in a blender until perfectly smooth and free of lumps. 4. Beat pumpkin, eggs, cream, salt, sugar, and spices. Pour into pie pan and bake at 375°F for 40 minutes. 5. ENJOY!
