Low-calorie, basically fat-free version of Libby's famous pumpkin pie. 155 calories for 1/8 of 9-inch pie. Cool whip and pie crust are extra. Ingredients:
3/4 cup splenda |
1 tbsp cornstarch |
1 3/4 tsp pumpkin pie spice |
1/2 tsp salt |
1/3 cup egg beaters |
15 ounce pumpkin |
12 ounce evaporated skim milk |
Directions:
1. Combine dry ingredients in small bowl. 2. Stir together pumpkin and egg in large bowl, then mix in dry ingredients. 3. Slowly add milk and stir until all ingredients are thoroughly mixed. 4. Pour into 9-inch pie pan. If desired, pour into 9-inch deep dish unbaked pie shell (not included in nutritional info). 5. Bake in pre-heated 425 degree oven for 20 minutes, then reduce heat to 350 and bake for 1 hour, or until top or pie is browned and knife inserted into center extracts clean. 6. Allow to cool before serving. Do not freeze (refrigeration is fine). |
