I just received this via email from a local market. Looks interesting and just in time for Thanksgiving. Ingredients:
1 unbaked deep dish pie shell (4-cup volume) |
1 cup pumpkin puree |
1/3 cup granulated sugar |
1 large egg |
1 teaspoon pumpkin pie spice |
2/3 cup light corn syrup |
1/2 cup granulated sugar |
2 large eggs |
3 tablespoons butter or 3 tablespoons margarine |
1/2 teaspoon vanilla extract |
1 cup pecan halves |
Directions:
1. PREHEAT oven to 350°F. 2. Combine pumpkin, sugar, egg and pumpkin pie spice in medium bowl; stir well. 3. Spread over bottom of pie shell. 4. Combine corn syrup, sugar, eggs, butter and vanilla extract in same bowl; stir in nuts. 5. Spoon over pumpkin layer. 6. Bake for 50 minutes or until knife inserted in center comes out clean. 7. Cool on wire rack. |
