In Mrs. Rowe's Restaurant Cookbook' Ingredients:
2 cups all-purpose flour |
4 teaspoons baking powder |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/4 teaspoon ground allspice |
3/4 cup sugar |
1 1/2 cups pumpkin puree |
3 eggs |
1 cup milk |
3/4 cup vegetable oil |
1 teaspoon pure vanilla extract |
1/2 cup chopped pecans |
maple syrup, for serving |
Directions:
1. Sift the flour, baking powder, cinnamon, nutmeg, allspice, and sugar together in a large bowl. 2. In another bowl, combine the pumpkin, eggs, milk, oil, and vanilla. 3. Add the flour mixture to the pumpkin mixture and mix well. 4. Fold in the pecans. 5. Heat a greased griddle over med-high heat. 6. Using 1/4 cup of batter for each pancake, spoon the batter onto the griddle. 7. Cook the pancakes on the first side until bubbles form in the center and they are browned on the bottom. 8. Turn and brown the other side. 9. Serve hot with warmed maple syrup. |
