I found this on Thinner Times. This came from WLS Lifestyles magazine. I have not tried this, posting for future use.
Ingredients:
1 cup quick-cooking oats, uncooked
1/2 cup pumpkin puree, libbys 100% pumpkin
2 tablespoons splenda sugar substitute
8 ounces light yogurt, vanilla
1 cup nonfat milk
1/2 cup powdered milk
1/2 teaspoon pumpkin pie spice
2 tablespoons pecans, coarsely chopped
2 cups canned pears in juice, diced
Directions:
1. In medium saucepan, bring milk, powdered milk, and pie spice to a boil; stir in oats.
2. Return to a boil; reduce heat to medium.
3. Cook 1 minute for quick oats or until most of liquid is absorbed, stirring occasionally.
4. Stir in pumpkin, sugar substitute, and pears; cook 1 minute. Let stand until desired consistency.
5. Spoon oatmeal into four cereal bowls. Top with yogurt and pecans.
