I found this on Thinner Times. This came from WLS Lifestyles magazine. I have not tried this, posting for future use. Ingredients:
1 cup quick-cooking oats, uncooked |
1/2 cup pumpkin puree, libbys 100% pumpkin |
2 tablespoons splenda sugar substitute |
8 ounces light yogurt, vanilla |
1 cup nonfat milk |
1/2 cup powdered milk |
1/2 teaspoon pumpkin pie spice |
2 tablespoons pecans, coarsely chopped |
2 cups canned pears in juice, diced |
Directions:
1. In medium saucepan, bring milk, powdered milk, and pie spice to a boil; stir in oats. 2. Return to a boil; reduce heat to medium. 3. Cook 1 minute for quick oats or until most of liquid is absorbed, stirring occasionally. 4. Stir in pumpkin, sugar substitute, and pears; cook 1 minute. Let stand until desired consistency. 5. Spoon oatmeal into four cereal bowls. Top with yogurt and pecans. |
