I just love these glorified cake mix recipes - so easy and so fail proof. And I might add delicious as well. This would make a great holiday dessert. I like this just topped with sweetened whipped cream or if you prefer, a cream cheese frosting would also be good. Ingredients:
1 (18 1/4 ounce) package yellow cake mix |
1/2 cup sugar |
1 teaspoon baking soda |
2 teaspoons cinnamon |
1/2 teaspoon ginger |
1 (15 ounce) can pumpkin |
1 cup vegetable oil |
4 eggs |
1 cup chopped pecans |
Directions:
1. Preheat oven to 375° and grease and flour a 9x13 baking pan. 2. In large mixer bowl, stir together cake mix, sugar, baking soda, cinnamon and ginger. 3. Make a well in the center and pour in pumpkin, oil and eggs. 4. Beat on low speed until blended. 5. Scrape bowl and beat 4 minutes on medium speed. 6. Stir in chopped pecans. 7. Pour into prepared baking pan and bake for 45 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean. 8. Cool and frost as desired. |
