Pumpkin Pancakes Or Waffles |

I found this recipe a few years ago from a B & B in Kentucky. The smell that fills your home when these are cooking is amazing. I wish there was a candle or room spray that smelled liked that. Ingredients:
1 cup all-purpose flour |
1 tbsp sugar |
dash of salt |
2 tsps baking soda |
1 cup milk |
2 tbsps vegetable oil |
1 egg |
1/2 tsp cinnamon |
1/2 cup canned pumpkin |
1/2 cup sour cream |
***honey-pecan butter |
1/2 cup pecans |
1/2 cup butter |
1/4 cup honey |
or |
***pumpkin sauce |
1 cup maple syrup |
1 1/4 cup pure pumpkin puree |
1/4 teaspoon cinnamon |
or |
***hot cider sauce for pancakes |
combine 3/4 cup apple juice or cider |
1/2 cup brown sugar |
1/2 cup light corn syrup |
2 tablespoons butter |
1/2 teaspoon lemon juice |
1/8 teaspoon cinnamon |
1/8 teaspoon nutmeg |
bring to a boil |
simmer about 15 minutes |
makes 1 1/4 cups sauce |
Directions:
1. Combine all ingredients. 2. Batter will be lumpy. 3. Spray grill or waffle maker with cooking spray. 4. Bake pancakes on grill using medium heat until bubbles rise to the surface and edges are brown. 5. Turn and bake until golden brown. 6. Serve with Honey-Pecan butter 7. Spread pecans on baking sheet and toast in 350 degree oven for 8 minutes. 8. Chop nuts in food processor or blender. 9. Beat butter and honey together until smooth. 10. Add pecans. 11. Serve with Pumpkin Pancakes or Waffles. 12. Makes one cup. |
