Ingredients:
1 1/4 cup(s) all-purpose flour |
2 teaspoon(s) baking powder |
1/2 cup(s) canned pumpkin puree |
1 egg |
2 tablespoon(s) melted butter |
1 cup(s) milk |
1 teaspoon(s) pumpkin pie spice |
1/4 teaspoon(s) salt |
1 tablespoon(s) sugar |
Directions:
1. Combine the first five dry ingredients in one bowl. Combine the milk, pumpkin, butter, and egg in a separate bowl and mix thoroughly. Gently gold the wet ingredients into the dry ingredients until just incorporated. Be careful not to over-mix, or your pancakes will be tough. 2. Place a cast iron skillet over medium heat. Add a bit of butter or cooking spray, then add a small scoop of batter to the pan. Cook until tiny air bubbles begin to form on the surface of the top side of the pancake (about 3 minutes), then flip and cook for about another 2-3 minutes. |
