Make these as a delicious breakfast for Halloween or Thanksgiving. My daughter loves topping hers with heated apple pie filling, dusted with powdered sugar. Ingredients:
2 cups all-purpose flour |
2 tbsp. packed brown sugar |
1 tbsp. baking powder |
1 tsp. salt |
1 tsp. cinnamon |
1/4 tsp. nutmeg |
1/4 tsp. ginger |
1 3/4 cups solid pack pumpkin |
1 egg |
2 tbsp. vegetable oil |
2 1/4 cups milk |
Directions:
1. Combine first 7 ingredients in a large mixing bowl. 2. Combine remaining ingredients in a small bowl. 3. Add pumpkin mixture to flour mixture; stir just until moistened.(Batter may be lumpy) 4. Heat skillet over medium heat. Brush with oil. 5. Pour 1/4 cup batter for each pancake; flatten slightly with back of spoon. Cook until bubbles form on surface & begin to burst. Flip. Cook for 1-2 more minutes or until golden brown. |
