This recipe is from Father Dominic Garramone, the Benedictine monk who hosts Breaking Bread with Father Dom on public television. Ingredients:
1 1/4 cups all-purpose flour |
1 tablespoon baking powder |
1 tablespoon granulated sugar |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground ginger |
1 cup milk |
2 eggs |
1 cup canned pumpkin |
1/4 cup vegetable oil |
Directions:
1. In a medium bowl, sift together all the dry ingredients 2. In another bowl combine milk, eggs, pumpkin and oil; beat until well mixed 3. Add pumpkin mixture to flour mixture; stir until just mixed;batter will be quite thick (see note) 4. Preheat griddle 5. For each pancake, spoon about 1/4 cup batter onto griddle;flatten into a 1/4 inch thick round 6. Cook over medium-high heat until bubbles form on the top, then turn and cook other side until browned 7. Serve immediately, or keep warm in the oven until you have a platter full to serve 8. NOTE: The thickness of the batter may surprise you. It doesn't pour at all, but if you add more liquid, the pumpkin flavor becomes diluted. |
