Another old Family Circle magazine recipe. I haven't made this one but I am going to try this for Thanksgiving. The orange puts a new spin on pumpkin pie. Ingredients:
1 prepared pie crust |
12 oz cream cheese, softened |
3/4 cup firmly packed brown sugar |
2 eggs |
1 tsp cinnamon |
1/4 tsp nutmeg |
1 tsp orange zest |
1 lb can of pumpkin |
sour cream |
Directions:
1. Beat cream cheese and sugar in a large bowl with electric mixer, until light and fluffy. 2. Beat in eggs, one at a time. 3. Stir in cinnamon, nutmeg zest and pumpkin until smooth. 4. Pour mixture into prepared pie shell. 5. Place into a preheated 425 degree oven; lower temperature to 350 degrees. 6. Bake for 35 minutes or until center is almost set. 7. Cool completely on wire rack. 8. Just before serving top with sour cream and decorate with Glaceed Orange Slices (optional). 9. Glaceed Orange Slices: 10. Combine 1/2 cup sugar and 2 Tbsp water in a small skillet; boil one minute. Add 4 thin orange slices; cook over low heat, turning several times, until they are almost transparent, about 5 minutes. Cool on wire rack. |
