1 3/4 cups flour, sifted |
3/4 tsp salt |
1/2 cup sugar |
2 tsp baking powder |
2 tsp cinnamon |
2 tsp nutmeg |
1 cup pumpkin or cold, cooked mashed yams |
2 eggs |
2 tbs melted butter |
3/4 cup milk |
Directions:
1. Preheat oven to 400 degrees F. 2. Sift flour, salt, sugar, baking soda, cinnamon and nutmeg together. 3. In a separate bowl, beat 2 eggs. 4. Add melted butter, milk adn pumpkin (or yams) to eggs. 5. Combine liquid and dry ingridients but don't over mix. 6. Fill greased muffin tins two-thirds full and bake for 20 to 25 minutes. 7. You can add 1 cup chopped pecans and/or 2 tsp grated orange rind if you want. Add them to the milk mixture. They aren't included in the calorie count. |
