From Southern Living. A rather dense bread but very tasting. Ingredients:
1 cup quick-cooking oats |
1 cup finely chopped dates |
1 cup chopped raisins |
1 cup chopped pecans |
1 1/2 cups hot milk |
1 teaspoon vanilla extract |
2 eggs, beaten |
1/2 cup pumpkin |
2 cups all-purpose flour |
3/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
Directions:
1. Combine oats, dates, raisins, pecans, and milk; mix well, and let stand 10 minutes. Stir in vanilla, eggs, and pumpkin. 2. Combine remaining ingredients; mix well, and gradually stir into oat mixture. Spoon into a greased and floured 9X5X3 inch loaf pan; bake at 350 degrees about 65 minutes or until a wooden pick inserted in center comes a clean. Cool on wire rack. |
