this is a good snack with cream cheese and a cup of coffee.. I also serve this before a holiday dinner on my cheese and cracker tray.. the recipe is from an old better homes and garden cookbook Ingredients:
1 cup brown sugar |
1/3 cup shortening |
2 eggs |
1 cup canned pumpkin |
1/4 cup milk |
2 cups sifted flour |
2 teasp. baking powder |
1/2 teasp. salt |
1/4 teasp. baking soda |
1/2 teasp. ginger |
1/4 teasp. cloves |
1/2 cup broken walnuts |
optional: 1/2 cup raisins |
Directions:
1. cream together brown sugar and shortening until light and fluffy. 2. add eggs, one at a time beating well after each addition 3. stir in pumpkin and milk . mix until well blended 4. in separate bowl mix flour, baking powder, salt, baking soda, ginger, and cloves 5. stir into the pumpkin mixture. 6. beat one min. with an electric mixer 7. mix in walnuts and optional raisins 8. pour into a greased 9 x 5 inch loaf pan 9. bake at 350'F for appox 55 mins or until done 10. remove from pan cool on a rack 11. serve with butter or cream cheese |
