Ingredients:
2 cups sugar |
1 cup vegetable oil |
3/4 cup water |
4 eggs |
16 ounces pumpkin, pureed |
3 cups all-purpose flour |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon clove |
1 teaspoon nutmeg |
1/2 teaspoon allspice |
1 cup pecans, chopped |
1/2 cup currants |
Directions:
1. Preheat oven to 350. 2. Spray 2 9x5x3 loaf pans. 3. Sift dry ingredients together. 4. Mix sugar, oil, water, eggs and pumpkin together. 5. Stir in dry ingredients. 6. Mix in pecans and currants. 7. Divide batter between pans and bake until tests done. |
