Pumpkin Muffins With Struessel Topping |

These muffins are perfect for a gift for a teacher or neighbor. Just throw them in a basket and you have a wonderful thank you. Ingredients:
3 1/2 cups flour |
3 cups sugar |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
4 eggs |
1 cup salad oil |
2/3 cup water (add last) |
1 teaspoon vanilla |
1 (15 ounce) can pumpkin |
1 cup sugar |
3 -4 tablespoons cinnamon |
1 (10 ounce) bag of chopped pecans |
Directions:
1. Preheat oven to 325 degrees. 2. Mix all ingredients together adding water last. 3. You can make loaves or muffins. 4. I then mix cinnamon and sugar together and sprinkle (cover completely) on top of muffin and then add pecans and sprinkle with more cinn-sugar mixture lightly before I bake. 5. Bake for about 25 min or until done. |
