this is a nice not to pumpkiny tatse to use up the pumpkin other then a mousse or pie Ingredients:
1 cup fresh pumpkin |
31/2 c flour |
1 c white sugar |
2 farm fresh eggs |
11/4 c milk |
4 tsp baking powder |
1/2 tsp cinnamon |
1/2 tsp nutmeg |
1/2 tsp salt |
Directions:
1. Perheat oven to 400 degrees 2. Put muffin cups in tin if your not using stone ware muffin pan 3. Cream butter and sugar fluffy 4. Beat in pumpkin and eggs 5. sift in flour and spices together 6. pour milk in to 7. Mix till a nice smooth batter then spoon in to muffin pan 8. Bake for 20-25 mintues till toothpick comes out clean when poked |
